How to make matcha soba noodle salad
- Cook the soba per packet, adding the edamame for the final 2 minutes. Drain and rinse under cold water until completely cool.
- Whisk the dressing. Combine the sifted matcha, tahini, soy, vinegar, maple and ginger, then whisk in cold water a little at a time until pourable and creamy.
- Toss. Combine noodles, edamame, cucumber and scallion with the dressing.
- Finish with sesame seeds and extra scallion. Serve chilled.
Tips & variations
- Add pan-seared tofu or edamame for extra protein.
- Sift the matcha into the dressing so it emulsifies smoothly.
- Rinsing the soba well keeps the noodles springy, not gummy.
